Today I finished the hot sauce I started back in September.
All I did was strain the liquid from the peppers.
I dissolved a 1/4 teaspoon of xanthan gum in a bit of water and then blended that in with the hot sauce to give it some body. That worked well, the sauce has a little viscosity to it now, it’s not just like water.
It tastes delicious. It’s peppery and vinegary without being overwhelming hot. Well worth the wait from last September.
