The hard cider I mentioned a couple of posts ago was ready to bottle today. Most the cider I had let ferment using wild yeasts, but I saved a gallon of the cider I fermented with commercial yeasts too.
While the wild yeast fermented cider tasted better 2 weeks ago, today I couldn’t tell much difference. So I blended them both together for bottling. I added some frozen apple juice concentrate which I hope will ferment in the bottle and make it fizzy.
I had a little bit left over after filling my bottles so I’m drinking that tonight. It’s still, it doesn’t have any carbonation or bubbles, but it tastes quite nice. It has less alcohol than beer, so it makes a nice light refreshing drink.
To Dad for making the cider press, and to Bender’s Orchard for growing the apples, and to Dan Comparet for giving me a couple of cases of bottles, and to me for making it; cheers!
