A Sweet Finish

I finished processing my honey harvest today.

I strained the honey once more and ended up with a generous gallon.

That’s almost 11 pounds of honey. If it looks dark in the picture, well, that’s because it is dark in person. The darker honey is the richer in flavor it’s supposed to be. And have more antioxidants.

Finishing the honey, I started to melt the beeswax so I could strain it.

After a little more cooking it’s looking even better!

Various impurities, dead bees, and unidentifiable gunk. I was beginning to question the wisdom of this effort.

But after two strainings and letting it harden, it’s not looking too bad. I think it needs to be melted and strained once more to get the rest of the impurities out.

Before I do that, I think I’ll get a double boiler and strainer just for this task. I ended up having to boil a big pot of water and repeatedly dip and scrub to get our kitchen utensils clean. Then I had to scrub a haze of wax from the pan I used to boil them.

Nothing to do now but kick back and enjoy the fruits of my (and the bees) labor.

    Well Dan…he wasn’t actually “minding it.” It ended up all over everything. 🙂
