{"id":162,"date":"2010-02-21T16:31:02","date_gmt":"2010-02-21T21:31:02","guid":{"rendered":"http:\/\/chuckzumbrun.net\/?p=162"},"modified":"2010-02-24T07:27:08","modified_gmt":"2010-02-24T12:27:08","slug":"spring-dreams","status":"publish","type":"post","link":"https:\/\/chuckzumbrun.net\/?p=162","title":{"rendered":"Spring Dreams"},"content":{"rendered":"<p>A dreary Sunday afternoon in February, snowy frozen fields outside, a fire in the fireplace and the Olympics bubbling away on the TV inside; it&#8217;s a perfect day to plan what to do this spring.<\/p>\n<p>I&#8217;ve generated a ridiculously long <a href=\"http:\/\/chuckzumbrun.net\/wp-content\/uploads\/2010\/02\/garden-2010.pdf\" title=\"Garden list\">list<\/a> of what I&#8217;m going to grow in the garden this year.\u00a0 Even under the spell of the Burpee&#8217;s catalog I realize it&#8217;s delusional and I&#8217;ll be cursing come July trying to keep it all under control.\u00a0 But what to cut from the list?\u00a0 It all sounds so good after 3 months of winter.<\/p>\n<p>Then I&#8217;ve been reading Charcuterie by Ruhlman and Polcyn (excellent book, it&#8217;s on my Christmas list in case anyone wants to get a jump on their gift buying \ud83d\ude42 ) and The Art of Making Fermented Sausages by Marianski and Marianski.\u00a0 Now I&#8217;m dreaming of cutting up more pork and making salami and German cold-smoked sausage.<\/p>\n<p>Which gets me drawing sketches of my long planned outdoor cooking area with a hot grilling\/smoking pit plus a masonry bread oven that&#8217;s vented into a large chimney for cold smoking.<\/p>\n<p>Here&#8217;s an old world smokehouse from &#8220;The Art of Making Fermented Sausages.&#8221;  I&#8217;m thinking something similar to this, except on a much smaller scale, and the firebox would be the bread oven sitting at ground level.<\/p>\n<p style=\"text-align: center\"><img decoding=\"async\" src=\"http:\/\/chuckzumbrun.net\/wp-content\/uploads\/2010\/02\/smokehouse1.jpg\" alt=\"Smokehouse\" \/><\/p>\n<p>And finally untouched on top of my reading stack is &#8220;The Year-Around Conservatory.&#8221;\u00a0 Maybe this year I&#8217;ll start doing something with the greenhouse I built as part of the chicken coop 4 years ago.<\/p>\n<p>Big plans on a lazy day.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A dreary Sunday afternoon in February, snowy frozen fields outside, [&hellip;]<\/p>\n","protected":false},"author":1,"featured_media":0,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[8,7],"tags":[],"class_list":["post-162","post","type-post","status-publish","format-standard","hentry","category-cooking","category-farming"],"_links":{"self":[{"href":"https:\/\/chuckzumbrun.net\/index.php?rest_route=\/wp\/v2\/posts\/162","targetHints":{"allow":["GET"]}}],"collection":[{"href":"https:\/\/chuckzumbrun.net\/index.php?rest_route=\/wp\/v2\/posts"}],"about":[{"href":"https:\/\/chuckzumbrun.net\/index.php?rest_route=\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"https:\/\/chuckzumbrun.net\/index.php?rest_route=\/wp\/v2\/users\/1"}],"replies":[{"embeddable":true,"href":"https:\/\/chuckzumbrun.net\/index.php?rest_route=%2Fwp%2Fv2%2Fcomments&post=162"}],"version-history":[{"count":0,"href":"https:\/\/chuckzumbrun.net\/index.php?rest_route=\/wp\/v2\/posts\/162\/revisions"}],"wp:attachment":[{"href":"https:\/\/chuckzumbrun.net\/index.php?rest_route=%2Fwp%2Fv2%2Fmedia&parent=162"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"https:\/\/chuckzumbrun.net\/index.php?rest_route=%2Fwp%2Fv2%2Fcategories&post=162"},{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/chuckzumbrun.net\/index.php?rest_route=%2Fwp%2Fv2%2Ftags&post=162"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
