(See the first half of this story <a href=\"http:\/\/chuckzumbrun.net\/?p=1099\">here.<\/a>)<\/p>\n<p>They&#8217;d been hanging in the basement for ten days after curing them in salt.  <\/p>\n<figure id=\"attachment_1180\" aria-describedby=\"caption-attachment-1180\" style=\"width: 150px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/chuckzumbrun.net\/wp-content\/uploads\/2011\/03\/DSCN1124.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/chuckzumbrun.net\/wp-content\/uploads\/2011\/03\/DSCN1124-150x150.jpg\" alt=\"\" title=\"DSCN1124\" width=\"150\" height=\"150\" class=\"size-thumbnail wp-image-1180\" \/><\/a><figcaption id=\"caption-attachment-1180\" class=\"wp-caption-text\">Cured and Dried<\/figcaption><\/figure>\n<p>In that time they had dried to a dark and leathery consistency.  Apprehension was high as I sliced off a few thin pieces.<\/p>\n<figure id=\"attachment_1181\" aria-describedby=\"caption-attachment-1181\" style=\"width: 150px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/chuckzumbrun.net\/wp-content\/uploads\/2011\/03\/DSCN1126.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/chuckzumbrun.net\/wp-content\/uploads\/2011\/03\/DSCN1126-150x150.jpg\" alt=\"\" title=\"DSCN1126\" width=\"150\" height=\"150\" class=\"size-thumbnail wp-image-1181\" \/><\/a><figcaption id=\"caption-attachment-1181\" class=\"wp-caption-text\">Sliced. Ready to Eat?<\/figcaption><\/figure>\n<p>The slices looked good&#8230;  I took a cautious sniff&#8230;  Smelled good too.  Nothing to do now except to try eating some&#8230;<\/p>\n<p>It was incredibly delicious!  Rich and salty, it also has a bit of smoky taste even though it&#8217;s not smoked.  Sliced thin like that it&#8217;s melt in your mouth tender.
