{"id":108,"date":"2010-01-31T20:55:30","date_gmt":"2010-02-01T01:55:30","guid":{"rendered":"http:\/\/chuckzumbrun.net\/?p=108"},"modified":"2010-01-31T20:59:39","modified_gmt":"2010-02-01T01:59:39","slug":"say-cheese","status":"publish","type":"post","link":"https:\/\/chuckzumbrun.net\/?p=108","title":{"rendered":"Say Cheese!"},"content":{"rendered":"<p>\u00a0It&#8217;s a cold weekend in January with nothing much to do, so I thought it would an ideal time to make some cheese.\u00a0\u00a0 I haven&#8217;t made cheese since before my eldest was born (a loooong time), but I remember it being a pleasant activity, a nice way to spend a day.<\/p>\n<p>Saturday morning I went to my neighboring dairy farmer and bought (well, he gave it to me) 4 gallons of the finest Indiana raw milk.<\/p>\n<p style=\"text-align: center\"><img decoding=\"async\" src=\"http:\/\/chuckzumbrun.net\/wp-content\/uploads\/2010\/01\/picture-001.jpg\" alt=\"milk1\" \/><\/p>\n<p align=\"center\">4 gallons of raw milk, ready to become cheese<\/p>\n<p>I used the cheese recipe that comes in a package of rennet by Dr. David Frankenhauser.\u00a0 If you don&#8217;t have your package of rennet handy you can Google &#8216;Frankenhauser cheese&#8217; and it&#8217;s the first hit.<\/p>\n<p>I made a double boiler of sorts by putting a cooling rack in my paella pan, filling it with water and setting the enamel pan of milk in that. \u00a0 It worked well, it made it easy to control the heat on the milk and not scorch it.<\/p>\n<p style=\"text-align: center\"><img decoding=\"async\" src=\"http:\/\/chuckzumbrun.net\/wp-content\/uploads\/2010\/01\/picture-002.jpg\" alt=\"milk2\" \/><\/p>\n<p align=\"center\">An improvised 5 gallon double boiler.<\/p>\n<p>There was one minor issue with the double boiler.\u00a0 You&#8217;ll note in the picture above the large paella pan is overlapping the edge of the stove.\u00a0 I fired up the burner and soon there was a distinct burning odor filling the house.\u00a0 Debbie and I looked about and decided it must just be something burning off the bottom of the paella pan.<\/p>\n<p>Not until I moved the pan later did I realize the overhanging pan was letting the flames lap up against the wooden top of the cart next to the stove.<\/p>\n<p style=\"text-align: center\"><img decoding=\"async\" src=\"http:\/\/chuckzumbrun.net\/wp-content\/uploads\/2010\/01\/picture.jpg\" alt=\"Burnt cart\" \/><\/p>\n<p align=\"center\">Whoops.<\/p>\n<p>\u00a0In this recipe you add rennet to the milk and wait 1 to 3 hours for it to gel.\u00a0 I waited 3 hours&#8230;
